Chicken, Walnut and Avocado Salad



The other day, my friend and I were ordering lunch and she asked if I wanted a salad, to which I responded that I don't like salads. And I don't actually think that's true. I love a good salad - I just have to be the one to make it. It has to have to proper balance of sweet and savory flavors. It has to have a base of greens that I actually like chewing. It has to have something crunchy or crispy. And it absolutely has to have a delicious dressing.


This salad checks all of those boxes!


It's so filling, packed with nutrients and I have a feeling it will be my hyperfixation meal for at least the next few days.



Ingredients:

1 Head of Butter Lettuce

1 tbsp olive oil

1/2 pound chicken breast sliced into strips

1/2 cup chopped walnuts

1/2 an avocado

1/4 cup of raisins

BRIANNAS Organic Tropical Mango Dressing


Instructions:

  • Pour 1 tbsp olive oil in cast iron skillet over medium heat.

  • Season your chicken breast with salt, pepper and garlic powder to taste.

  • Place strips in the cast iron and cook evenly on both sides , set aside.

  • Wash, dry and chop lettuce.

  • Chop chicken breast into cubes.

  • Add chopped lettuce, diced avocado, and chopped chicken breast to a bowl.

  • Top with raisins and chopped walnuts.

  • Drizzle with mango dressing.

  • Enjoy!
