The other day, my friend and I were ordering lunch and she asked if I wanted a salad, to which I responded that I don't like salads. And I don't actually think that's true. I love a good salad - I just have to be the one to make it. It has to have to proper balance of sweet and savory flavors. It has to have a base of greens that I actually like chewing. It has to have something crunchy or crispy. And it absolutely has to have a delicious dressing.
This salad checks all of those boxes!
It's so filling, packed with nutrients and I have a feeling it will be my hyperfixation meal for at least the next few days.
Ingredients:
1 Head of Butter Lettuce
1 tbsp olive oil
1/2 pound chicken breast sliced into strips
1/2 cup chopped walnuts
1/2 an avocado
1/4 cup of raisins
BRIANNAS Organic Tropical Mango Dressing
Instructions:
Pour 1 tbsp olive oil in cast iron skillet over medium heat.
Season your chicken breast with salt, pepper and garlic powder to taste.
Place strips in the cast iron and cook evenly on both sides , set aside.
Wash, dry and chop lettuce.
Chop chicken breast into cubes.
Add chopped lettuce, diced avocado, and chopped chicken breast to a bowl.
Top with raisins and chopped walnuts.
Drizzle with mango dressing.
