Easy Easter Sprinkle Cookies

If you watched my How to Make Spring Whimsical video, you know that Easter is one of my favorite holidays. My husband affectionately calls it - "Thanksgiving in the Spring".
We love everything about Easter - the bright colors, Easter baskets, egg hunts and bunnies. I haven't been to church in years but I actually love Easter sunday mass as well. It all just feels so fresh and new. Like we have another chance to live a beautiful life. Personally, I think the New Year should start in the spring and not the dead of winter. But that's another video for another day.
If you're looking for an incredibly easy sweet treat to make for your Easter dessert table, look no further than these delicious sugar cookies. They're quick, delicious and you get a lot of bang for your buck in terms of appearance!
An easy sugar cookie dough rolled in the prettiest pastel sprinkles make for a delicious, Springy Easter treat!
Ingredients
8 tbsp (½ cup) butter, softened
½ cup sugar
1 egg yolk (this keeps them rich without needing more butter)
1 tsp vanilla extract
1 ¼ cups all-purpose flour
¼ tsp baking soda
¼ tsp salt
2–3 tbsp sprinkles (linked here)
Instructions
1. Cream the butter + sugar Mix until light and fluffy (about 1–2 minutes). This is what gives that soft bakery texture.
2. Add wet ingredients Mix in egg yolk + vanilla until smooth and glossy.
3. Add dry ingredients Stir in flour, baking soda, and salt until just combined (don’t overmix).
4. Fold in sprinkles Gently mix them in so the dough stays soft.
5. Chill (important!) Pop the dough in the fridge for 20–30 minutes.
6. Scoop + roll Roll into small balls, lightly press, and add extra sprinkles on top if you want them extra pretty.
7. Bake
350°F
9–11 minutes
Edges set, centers soft (they’ll finish baking on the tray)
